Bacon Congee

Because I really love rice porridge a.k.a. congee,
I do various experiments with them over the years.
(Yah, I use many other ingredients besides the traditional ones)

Jook a.k.a. Congee
a.k.a. Rice porridge


Bacon
Recipe:
In a big enough pot
...
Fry 6-8 bacon till crispy

(set half of them aside

while breaking apart into
small pieces
that other half)
Brown 1 clove garlic

(ginger optional)

in bacon oil

...
Add in 1 cup of pre-soaked rice

(or 1.5 to 2 cup left over rice will do)
with 3 cups water
seasoned with
...

1 tbs dashi

1 cube chicken stock

1 tbs vinegar

...
stew
for 45 mins plus
...
serve

garnished

with
the other part of z bacon
(optional)
scallions

eggs

(
century eggs preferred
but not everyone can stomach this)

fermented bean curd preserved bamboo shoots
& other traditional "jook" condiments

*enjoyed*

Watea Melon?

So... I was given this recipe to try right,
but of course knowing me... I rarely go by recipe 100%.
Here's my take on this drink...

1 plus cup ice
1 cup Sweet Tea
3 cups cubed Water Melon
1/4 cup sugar
1/2 cup Vodka
(I tried Gin too and it taste great!)
2 tbs grenadine
(my way)
process/blend

Leftover into Lunch

Another Lunch from leftovers...
Had rice & shrimp TomYum ordered to go with my Bibimbab last night.
Didn't finish my rice and never even touched my Shrimp TomYum, so...

Lunch Today!
Shrimp Tom Yum
(no recipe)
Quickie Fried Rice
Recipe:

Heat Wok with oil &
brown onions,
slices o' ginger,
mini-cut fish tofu
(fish cake can be sub)
plus an egg scrambled
...
Add a few good dashes of
Vietnamese fish sauce,
touch of soy sauce,
Fresh ground Salt & Pepper
...
Add leftover rice
*mix well*

Sprinkle fresh diced cilantro
to fried rice
garnish with a
keylime
...
