Rib Prep:
Preparing the ribs
(Clean & peel the membrane and trim the fat of the back of the rib)
Lay rib on a piece of plastic wrap
double the width and length of the rib

Wet the rib with a spray of the mop sauce
Rub the "RUB" into both sides of the rib
Wrap the rib with the plastic wrap,
Add another piece of wrap to cover
Marinate it in the fridge for 4 hrs

*Prepare your grill*
to 225 - 250 degrees

Grilling process:
Sprinkle brown sugar then top with more "RUB" evenly
Every 30 - 45 mins spray mop sauce on ribs
*Do not flip*

Bacon Congee

Because I really love rice porridge a.k.a. congee,
I do various experiments with them over the years.
(Yah, I use many other ingredients besides the traditional ones)

Jook a.k.a. Congee
a.k.a. Rice porridge

In a big enough pot
Fry 6-8 bacon till crispy

(set half of them aside

while breaking apart into
small pieces
that other half)
Brown 1 clove garlic

(ginger optional)

in bacon oil

Add in 1 cup of pre-soaked rice

(or 1.5 to 2 cup left over rice will do)
with 3 cups water
seasoned with

1 tbs dashi

1 cube chicken stock

1 tbs vinegar

for 45 mins plus

the other part of z bacon

century eggs preferred
but not everyone can stomach this)

fermented bean curd preserved bamboo shoots
& other traditional "jook" condiments

Come on, its bacon!
